Make this super moist Pumpkin Spice Loaf in your Bread Machine in just a little over 2 hours!
Need something special to take to that church fellowship lunch or special gathering that is sure to please? I adapted this recipe from a few that I found online especially for my new Oster Expressbake Breadmachine. Even if you aren’t much of a cook or baker (I often call myself a food “assembler”, ha!), you can pull off this moist and sweet loaf of pumpkin bread. It is really as easy as mixing your ingredients and adding them to your bread machine.
My husband bought this food “assembler” a wonderful new bread machine for Christmas. Due to some food allergies, it is difficult for me to find store bought bread that I can eat. I am not one to spend hours in the kitchen mixing up, well, anything, so my thoughtful husband purchased a handy dandy machine to help me out. I have to say that I adore my new bread machine. I make bread at least every other day now and have experimented with everything from white bread for sandwiches to more exotic sweet breads like this Pumpkin Spice Loaf recipe. After a couple dozen loaves now, I can honestly say that I haven’t messed one up yet. It is as easy as compiling the ingredients, dumping them in the bread machine pan and putting it on the right settings. Oster’s manual has some really good beginning recipes to get you started too.
1 cup sugar
1 can pumpkin (15 oz.)
1/3 cup softened butter
1 tsp vanilla extract
2 cups white flour
1-1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp pumpkin pie spice
PUMPKIN SPICE LOAF DIRECTIONS:
Mix wet ingredients and dry ingredients in separate bowls.
You can either dump your wet ingredients in the bread machine on the bottom and then layer the dry ingredients on top and let the machine do all the mixing for you OR you can premix the wet and dry ingredients a bit before putting them in your machine. Whatever method you like better works fine. (I personally like to premix them before adding them to the bread machine pan to make sure no flour cakes on the sides of the pan during mixing and prematurely bakes there – crusty…perhaps a bit of OCD in me!)
For the Oster Expressbake Breadmachine, I use the “Quick” bread setting #7 which is a 1 hour and 43 minute cycle. Then after it processes through completely and the buzzer dings, I open the lid and check it with a knife inserted in the center to see if it is completely baked through. It has required 15-20 minutes more time on the #12 “Bake” setting after the “Quick” cycle completes to thoroughly bake. It will appear a bit spongy even once finished as this is a very moist bread recipe.
Your bread machine brand may vary and operate differently. My recommendation is about a 2 hour total processing/bake time for this Pumpkin Spice Loaf. You can gauge what settings you need to use on your own brand of bread machine since they all vary a bit in operation.
This is a very moist and dense sweet bread. It almost has the texture of a full bread pudding and retains its moisture well when storing from my experience. I recommend you gobble it up in a week or so though for freshness. Enjoy!
